- Roll bananas with a rolling pin, peel off the skin and mash them with a fork to make a puree.
- Whisk banana puree with egg, sugar, flour, milk, baking powder and oil until smooth.
- Cover and let sit in the fridge for 30 minutes.
- Cook each pancake for 3-4 minutes (both sides) and serve with fresh fruit, berries, honey, or maple syrup.
